What You Need:
Veggies of your choice (I kept it simple and used zucchinni and onion)
Garlic (to taste)
1 Egg (cook the egg to your liking ex. Over easy, sunny side up, I made it poached)
Hot Sauce (optional)
What You Do:
Get a pan and warm up enough coconut oil to coat the bottom of your pan
Throw in your chopped onions and cook until they are translucent
Add fresh garlic
Add veggies. Like I mentioned earlier I kept it easy and just threw in some zucchini
Cook until soft
Once veggies are soft, transfer them over to your plate
Add sliced tomatoes on top, a sprinkle of your pre cooked quinoa and a touch of feta
Add your egg to the top of that and drizzle some hot sauce over it to taste.
