Strawberry Vanilla Chia Protein Pudding

Pudding has always held a place in my heart. Creamy and delicious it never disappoints...except, when it comes to health. Pudding is not the healthiest of snacks and most puddings that you buy in stores are made with chemicals that I do not want to put in my body. It was time that I came up with a solution, have my pudding and eat it too, strawberry vanilla chia pudding was then born.



2 cups strawberries
2 cups almond milk
3/4 cups chia seeds
1 scoop vanilla protein powder
Splash of pure vanilla extract
Honey to taste

-Blend coconut milk, honey, vanilla extract, protein powder, and 2 cups strawberries until smooth.
-Put your strawberry/almond milk mixture in a bowl and add your chia seeds.
-Whisk that baby up until well combined.
-Place mixture in the refrigerator for about 30 minutes until mixture resembles tapioca pudding.
-Spoon into a serving bowl and enjoy!
*Great for a quick breakfast or snack throughout the week as it should stay well in a tight seal container in the refrigerator for about a week.

  2. I haven't really done the chia seeds thing yet. Can you really taste them? Do they get stuck in your teeth?

    1. They do not really taste like anything to me, they just fill you up and are they are super rich in anti-oxidents. They are actually hard like a poppy seed when you purchase them and once you add them to something such as milk, yogurt, a smoothie, they expand into a gel like tapioca substance. They get stuck in your teeth every so often, but the more they sit and "gel" the less likely they are to get stuck.

    1. Thanks!! I love the taste, you have to let me know what you think when you try it. I did 3/4 cups of chia seeds because they expand drastically after letting them sit in the fridge, 1 cup would have probably been too much chia for me. Thank you so much for letting me know about the no reply. I don't have any idea as to why it switched back to that! grrrr. It should work now...I hope!
