Cheesy Veggie Quinoa Bake
I love quick and easy casseroles, especially ones that are on the healthier side. As I was preparing my quinoa on Sunday for my weekday lunches I came up with the idea of this deliciously yummy cheesy veggie quinoa bake. Great to serve as dinner or split it up for your weekday lunches too.
What you need:
2 handfuls of fresh washed spinach
1 cup sliced mushrooms
1 cup prepared quinoa
1 1/2 cup shredded cheddar cheese
garlic, salt, pepper (to taste)
2 teaspoons Coconut oil
What you do:
-Preheat oven to 350 degrees
-As you are preparing your quinoa you want to saute your veggies
-Put 1 teaspoon of coconut oil in a pan, heat it up, add your zucchini.
-Once zucchini is at desired tenderness, add your spinach along with garlic, salt, and pepper.
-Once your spinach has fully cooked transfer the spinach and zucchini into a lightly sprayed casserole dish.
-Next add a teaspoon of coconut oil to another pan and toss in your sliced mushrooms along with garlic, salt, and pepper.
-Once mushrooms are fully sauteed add them to your zucchini and spinach
-Quinoa should be done at this point, add the quinoa as well as 1/2 cup of cheese to your casserole dish
-Fold all ingredients together well.
-Use your leftover 1 cup of cheese and sprinkle it over the top of your casserole.
-Pop your dish in the oven for about 20 minutes until the top is bubbly and brown.
-Once your casserole is ready, take it out of the oven, cool slightly, and enjoy!
