A Treat and A Special Guest Post!

Today is a very special day as I had mentioned. Today we have one of my favorite bloggers guest posting for us. Her name is Kerry and she comes from all the way over at Till Then Smile Often blog.
Not only is she one of the sweetest most good hearted people that I know (check out her Be The Chang You Seek project) she also knows how to cook up some delicious mouth watering dishes!
So instead of me rambling on and on why don't you take a look for yourself....Take it away lady!
                                                                                                                                                                 

Thank you to Tori for letting me share her space today. I am Kerry and I blog over at Till Then Smile Often. The thing I love about salad is that you can use up all the ingredients in your house. Really just about anything can go into a salad! This one recently made it onto a plate and so I am glad to share it with you. When it is hot outside like it has been here, a salad is much preferred over turning on the stove.  
Summer Strawberry Salad

Ingredients: 2 cups Romaine or Iceberg lettuce ~ 4 Large strawberries ~ 1-2 slices of onion, diced ~ 1/4 cup of cranberries ~ 4 oz grilled BBQ chicken ~ Tortilla Strips

Dressing: 2 TSP EVOO ~ 2 TSP Fig Infused Balsamic Vinegar ~ 1/8 TSP Minced Garlic ~ Pinch of Salt and pepper  

Directions: Place the lettuce on the plate, top with the onion and strawberries. Sprinkle the cranberries and tortilla strips over the salad. Place the sliced grilled chicken on top and garnish with a sliced strawberry. Mix up the salad dressing and serve!
