Refried Bean Tostados With Pico De Gallo

Want an easy peasy dinner recipe that's yummy and healthy to boot? Check this out.

Refried Bean Tostadas With Pico De Gallo



Ingredients for pico de gallo:

4 plum tomatoes chopped in pieces
1 small jalapeno finely chopped
1/2 small red onion finely chopped
2 Tbsp fresh lime juice
1/2 tsp salt and pepper
1/4 cup fresh cilantro
and combine all.




Next:

Top 8 tostadas with 15 oz can of refried beans warmed, shredded romaine lettuce, and the pico de gallo.


Tostadas:

Brush corn tortillas with canola oil. Place on a baking sheet at 450 degrees until crisp. About 8 minutes flipping half way through. Transfer to a paper towel and they will harden as they cool.

Optional:
Avocado
Sour Cream/Plain fat free Greek yogurt
Corn
Cheddar Cheese
